Cauliflower Roasted with Parmesan

A delicious side dish that makes a refreshing change from eating steamed cauliflower. Caramelised, roasted cauliflower florets with plenty of garlic and onions is now one of our go-to side dish recipe.


  • 1 head cauliflower - cut into florets
  • 1 medium onion - sliced
  • 4 sprigs thyme
  • 4 garlic cloves - unpeeled
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 50g grated Parmesan

Prep time: 10 mins Cook time: 55 mins

Preheat oven to 200°C, 180°C fan, 400F, Gas mark 6.

Place the cauliflower florets on a large rimmed baking tray along with the onion, garlic, thyme and olive oil. Season well with salt and black pepper.

Roast in the preheated oven until almost tender, around 35-40 minutes, turning occasionally.

Sprinkle with the Parmesan cheese and continue roasting for another 10-15 minutes until the cauliflower is tender.
